The Owner Of The Company That Makes Sriracha Is Exactly How We Hoped He’d Be

David Tran, the LA-based founder of Huy Fong Foods Inc. — the people who make Sriracha , that so-called rooster sauce everyone loves so much — spoke to the LA Times about his spicy empire, and he was exactly how we dreamed he’d be.

But first, we learned that the imitators and chip flavors can totally use the Sriracha name without Tran’s consent because the sauce itself is named for Si Racha, Thailand, which cannot be trademarked because it is the name of a city. Secondly, Huy Fong Foods is named after the freighter that took Tran — a major in the South Vietnamese army — and his family to America when he fled communism. And thirdly, the main reason we think we love this guy, was his response to someone’s complaint that the sauce was too hot. Tran said, “Hot sauce must be hot. If you don’t like it hot, use less. We don’t make mayonnaise here.”
